Activate Yeast: In a small bowl, dissolve yeast in warm water. Let it sit for 5-10 minutes until foamy.
Mix Dry Ingredients: In a larger bowl, whisk together the plain flour, whole wheat/oat flour, and salt.
Combine: Add the olive oil and optional beaten egg to the yeast mixture. Pour this wet mixture into the dry ingredients. Mix until a shaggy dough forms.
Knead: Turn the dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic (or mix in a stand mixer).
Rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Preheat & Shape: Preheat your oven to 425°F (220°C). Gently punch down the dough and shape it into one or two personal-sized pizza bases on a lightly floured or cornmeal-dusted surface.
Top It! This is the fun part. Let your child help. Spread a *very thin* layer of sauce (or just olive oil). Sprinkle with cheese. Add *only* the 'safe' toppings they choose. Maybe put one 'brave' topping on a tiny section.
Bake: Carefully transfer the pizza(s) to a baking sheet or pizza stone. Bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly.
Cool & Cut: Let it cool slightly before cutting into manageable pieces.
